Homemade fresh pasta: the perfect addition to any pasta salad recipe
Good quality pasta can make a difference to any dish. At Pasta Pantry we are pleased to offer a wide variety of fresh pasta that can be incorporated into your favourite pasta salad recipes. Our short pasta includes cavatappi, fusilli, penne, radiatore, rizatone, rotelle, shells and ziti. Long pastas include angel hair, buccatini, fettucine, mafalda and spaghetti. Pasta salad is a great addition to any barbecue or picnic. We are all familiar with macaroni salad but why not try some of these regionally inspired pasta salads for an added punch to your menu.
Sicilian Pasta Salad
1 lb. penne or shell pasta
3 Tbsps white balsamic vinegar
1 cup of cherry tomatoes
1 medium head of radicchio
1 cup of mixed pitted olives
1 cup of crumbled ricotta cheese
Boil pasta till al dente (approximately 10 minutes)
While pasta is cooking, whisk ⅓ cup extra virgin olive oil and vinegar. Add remaining ingredients.
Drain pasta, season with salt and pepper. Toss to combine.
Greek Pasta Salad
12 ounces fusilli pasta
1 seedless cucumber Lemon Oregano Dressing
2 plum tomatoes ⅓ cup fresh lemon juice
2 roasted red peppers 1 tsp Dijon mustard
½ small onion ½ tsp dried oregano
¼ cup pitted Kalamata olives ½ small garlic clove
1 cup crumbled feta cheese ⅓ cup extra virgin olive oil
½ cup Lemon Oregano Dressing
Boil pasta, combine ingredients in a bowl, add salt and pepper, toss to mix
Southwest Pasta Salad
12 ounces penne or macaroni
1 red bell pepper
1 large sweet onion
¼ cup chopped cilantro
1 to 2 jalapeno chilies
1 cup low fat mayonnaise
1 cup salsa
1 Tbsp fresh lime juice
½ tsp salt
Cook pasta and drain. In a large serving bowl combine pasta, tomatoes, bell pepper, onion, avocado, cilantro and jalapeno. For dressing; whisk together mayonnaise, salsa, lime juice and salt. Add to pasta mixture and toss gently.
